These buffalo chicken chaffles are a satisfying and tasty meal that has all the deliciousness of buffalo wings, but in an easy to make, easy to eat form!
After all, chaffles have a wonderful texture and are just an easy way to throw ingredients together and get a keto friendly meal with a fantastic texture.

The chaffle is a keto wonder! A very basic chaffle consists of only 2 items in the batter. Eggs and cheese!
Surprisingly, they actually taste very similar to waffles!
Don’t gag yet! Chaffles are really good even when eaten as a sweet treat instead of as a savory dish.
And no, they don’t taste like burnt cheese!!
Now, today of course we have a special kind of chaffle. It’s one of my personal favorite flavors too.
Buffalo!
These buffalo chicken chaffles are delicious right out of the waffle maker.
Of course they are even better when topped with a bit of fresh cheese.
These particular waffles I also added a bit of almond flour to thicken up the batter.
If you like buffalo chicken, you should definitely give these fun chaffles a try!

Ingredients

- 1/2 cup of fine almond flour
- 2 teaspoon gluten-free baking powder
- 4 large eggs
- 1 cup chicken, shredded
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup Frank’s Red Hot Sauce + optional 1 tablespoon for topping
- 1/2 cup feta cheese, crumbled
- 1/2 cup celery, diced (for topping)
Instructions

To make these fun buffalo flavored chaffles, we’ll start with creating the batter base.
In a small mixing bowl combine your baking powder and almond powder together and give a quick whisk and set to the side.
Let your waffle maker preheat to a medium high heat, and spray generously with a low carb non-stick spray.
In a large mixing bowl add in your eggs and beat them with an electric whisk until nice and frothy.
(If you don’t have an electric whisk, I highly suggest you get one! They are inexpensive, easy to clean and make life so much easier while cooking!)
Add in the buffalo hot sauce into your eggs and beat until everything is mixed well.
Next, whisk your flour mixture into your eggs until they are just combined.
Add in your shredded chicken and gently mix.
Add a scoop of the chaffle batter to your heated waffle maker and cook your chaffle until you see the ourside is browned. Usually about 4-5 minutes.
Remove the chaffle from the waffle maker and continue making chaffles until your batter is completely gone.
Serve your chaffles hot and topped with the crumbled up feta and sliced celery.
I like mine with a bit of extra buffalo sauce on top!
Enjoy your delicious keto friendly dinner!
