Having a salad is a quick and easy way to get lots of keto friendly veggies in for the day. This keto shrimp and avocado salad is no exception and it’s super tasty!

This salad is filled with arugula which adds a punch of zesty flavor, avocado a couple of cherry tomatoes and lots of yummy shrimp of course!
Arugula is a fantastic peppery flavored green that’s keto friendly and gives this particular salad a great flavor. It pairs nicely with the mellow avocado and savory shrimp.
The great thing about this salad is that it makes 4 servings. This means you can use it to meal prep lunch for the next 4 days, or use it for dinner tonight and lunch tomorrow!
Of course, if you have a large family that’ll eat this in one serving, you could consider doubling the recipe to make sure there’s leftovers for later.
Ingredients
- 2 tablespoons of unsalted butter
- 2 cloves minced garlic
- 1 lb of wild caught shrimp, peeled and deveined
- ½ teaspoon ground cumin
- Sea salt and black pepper, to taste
- 1 large avocados
- 3 tablespoons of refined coconut oil or olive oil
- 1½ tablespoon fresh lime juice
- 2 tablespoons of fresh cilantro, chopped
- 4 cups baby arugula
- 8 grape tomatoes
- 24 large green olives
- 3 ounces walnuts
- 1 large lime, cut into 8 wedges for garnish
Instructions
To make this keto friendly avocado and shrimp salad, start by cooking the shrimp.
Add your butter and minced garlic to a large frying pan over medium high heat.
Cook the garlic for one minute until fragrant and lightly browned.
Add in the shrimp and ground cumin to the skillet and season with salt and pepper.
Mix well in the pan and cook for 2-3 minutes until the shrimp starts to pink up and curl.
Remove the shrimp from the heat and set aside.
Once the shrimp has cooled down, chop up roughly and place in a large serving bowl.
Dice the avocado and add in to the shrimp, along with the coconut oil, lime juice and fresh cilantro.
Season with salt and pepper and toss to combine.
Divide the baby arugula between 4 salad bowl and spoon on one fourth of the avocado shrimp mixture over each arugula salad.
Evenly divide the green olives, walnuts and lime wedges among each salad bowl.
Serve immediately or place in the fridge for later.

Notes
This makes a great meal prep meal. Simply add individual ingredients into separate containers and mix together when ready to eat!

We used take out containers we had from a previous dinner out. They worked perfectly for packing the lunch for work.
